I graduated from high school in 1990 and determined that culinary and business school was not for me. I began working for the two most popular catering companies at that time. I performed almost every job imaginable, from dietary meals in contractual cafeterias to up scale dinners for hundreds of people. My average work week consisted of approximately seventy hours, spent for the most part, on my feet or heavy lifting. It was then that I decided to work for myself, open my own business and jump in with both feet!

I opened as McCormicks Deli in downtown Springfield in the spring of 1994. In 1994, McCormicks was the only restaurant of its kind to serve sandwiches on fresh baked bread every day. The word spread quickly and we were very busy from the start.

The first year in business was based on trial and error, which taught me that in order for my business to survive, it had to maintain a consistent rate of growth. I began to develop the concept of catering to smaller business and luncheons that were taking place in the downtown area. Our reputation as a good, solid catering company, as well as, restaurant flourished and by the third year of business I has purchased a catering company.

After three years of business alone, I met a beautiful woman, who later became my wife. This is where my story becomes our story. When I met Sarah, she was working in the medical field and in college. Soon after we met, we were married and expecting our first child. This presented all new challenges and we decided to open our second location on the west end of Springfield. Sarah put her medical career on hold and hopped right into the restaurant business.

Our "little sandwich shop" located downtown suddenly blossomed into a fast paced sometimes very hectic operation. We eventually hired twelve employees and were fortunate to to find a loyal friend and qualified manager. Scott has been with our growing company for the past ten years.

In 1998 our business began to expand so rapidly that we needed to refocus and reorganize. It was then that we decided to focus our efforts solely on our west end location. Although we greatly missed the loyalty and "neighborhood feel" downtown, we felt this was the right move to further our company.

Today our company is still growing at a very steady rate and continues to draw in new customers and catering clients every day. We credit our continuing success to very supportive parents and extended family members, loyal friends and the continuing patronage of our loyal customers and repeat catering clients. Scott, Sarah and I still continue to work within our business every day.
